ABSTRACT. Consumers who make purchases at sales outlets or fish fry restaurants belonging to fisheries enterprises located in the northeast of Poland were described. The preferences of consumers regarding local lake fishes were also studied. Customers at fresh fish sales outlets most frequently purchased vendace, rainbow trout, perch, and pike, while fish fry restaurant customers bought tench, pike, pikeperch, and perch most commonly. Respondents evaluated the range of locally available fish species as either average or good. A decided majority of respondents agreed that fish caught by fishers in local waters is an attractive natural food product that is in demand by tourists.
